- 1 tablespoon cornstarch
- 1 teaspoon mustard
- 1/4 teaspoon sugar
- 1/4 cup vegetable oil
- 1 tablespoon white pepper
- Lemon
- A pinch of salt
- 1 potato
- 1 small cup of potato cooking water
Method
- Boil the chopped potato and put it in the blender or food processor... The potato must be hot when mashed. Add the starch and 1/2 small cup hot water....
- Grind again and add the lemon (juice), sugar, salt, and mustard and continue grinding; put the mixture on medium heat and add the rest of the hot water... stir a little...
- When the mixture's texture becomes similar to muhallebi (a milk pudding), add the oil in small amounts and stir until all the oil is used...
- Stir a little and return the mixture to the electric grinder for a few seconds to achieve the same mayonnaise texture and a taste very close to the original.
