Ingredients
- 1 kg flour
- 2 cups water
- 1/3 cup sugar
- 2 teaspoons yeast
- 1 teaspoon ground mahleb
- 1 teaspoon ground anise
- untoasted white sesame seeds
- 1 tablespoon honey
- Dust a work surface or table with flour and divide the dough into discs, then cover the discs and let them rise for half an hour. Drain the sesame from the water and honey and spread it on a baking tray
- Dip each dough disc in the sesame, then roll it out into a circular disc, and return the rolled discs to rest and let them rise for one hour.
- Tripoli ka'ak can be served with labneh and za'atar or cheese, or anything else you like
Method
- Knead all the ingredients well except for the sesame seeds. Dissolve the honey in the water, then add the sesame seeds to it.
- Sprinkle flour on a clean countertop or table and divide the dough into discs. Cover the dough discs and let them rise for half an hour. Remove the sesame seeds from the water and honey, and spread them on a tray.
- Dip each dough disc in the sesame seeds, then flatten it into a round disc. Let the flattened dough discs rise again for one hour.
- Place the dough discs on an oven tray and put the tray into a preheated oven at 270 degrees until the discs are cooked through and nicely browned.
- Tripoli ka'ak can be served with labneh and za'atar, cheese, or whatever you like.
