Homemade, tried-and-tested tomato syrup. The syrup is used in many dishes such as cumin-spiced tomatoes, bulgur with tomatoes, stews and more.

Method

  1. Wash the tomatoes and remove the stems, then cut them into small cubes.
  2. Put them in a blender and grind them well until smooth, obtaining a thick tomato juice.
  3. Put it in a pot over the heat and wait for it to boil, then skim off the foam that appears on the surface.
  4. After it has come to a boil twice or after just a few minutes, take the tomato syrup off the heat.
  5. Pour the syrup into sterilized jars or washed glass bottles and expose them to the sun to sterilize.
  6. Pour a little oil on the surface to create a sealing layer and store them for a long time.
  7. Close the jars or bottles while they are still hot.
