Ingredients

  • 6 eggs
  • 1 1/2 cups white (all-purpose) flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 100 milliliters liquid milk
  • 60 milliliters vegetable oil
  • 1 tablespoon white vinegar
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • Ingredients for the fresh cream:
  • A large carton of whipping cream (liquid)
  • 4 tablespoons powdered sugar, or to taste
  • 1 packet ready-made cream powder
  • Method for preparing the fresh cream:
  • The recipe and method for making the Swiss roll with fresh cream and jam come to you from the Sho Tabkhin Al-Youm kitchen:

Method

  1. Separate the egg whites from the yolks and place each in a separate bowl.
  2. Beat the egg whites with the vinegar and a pinch of salt until stiff foam forms.
  3. Beat the egg yolks with the vanilla, then gradually add the sugar and beat for about 5 minutes, then add the oil.
  4. Sift the flour and baking powder aside.. begin adding the flour and baking powder mixture alternately with the milk. Continue beating the batter, then gently fold in the egg whites very slowly with a wooden spoon from the bottom up, taking care not to deflate the mixture.
  5. Line the baking sheet with parchment paper and pour the batter onto it.
  6. Bake the cake in a preheated oven at 180°C.
  7. Leave the cake in the oven for about 10 to 15 minutes maximum because we don't want the Swiss roll to stay in the oven too long or it will become tough...
  8. When the cake is done, remove it from the oven and roll it while it is still hot
  9. Wrap the cake in a towel and cover it well, then set it aside to cool.
  10. When the Swiss roll has cooled, carefully unroll it and fill it with a thin layer of fresh cream and then a layer of strawberry jam or any jam you have available, as desired
  11. Re-roll the Swiss roll and spread fresh cream on the outside; decorate as shown in the accompanying photos with fresh fruit as available and desired, and also with flowers and blossoms.
  12. The flowers used to decorate this Swiss roll are real but not edible and were removed before slicing the cake, used only as decoration.
  13. Ingredients for the fresh cream:
  14. A large carton of whipping cream (liquid)
  15. 4 tablespoons powdered sugar, or to taste
  16. 1 packet ready-made cream powder
  17. Method for preparing the fresh cream:
  18. Place the bowl of the electric mixer and the whisk attachment in the refrigerator or freezer for at least one hour before whipping the cream so they are completely cold.
  19. Pour the liquid cream into the electric mixer bowl
  20. Gradually add the powdered sugar while whipping, adjusting the amount to the desired sweetness. Also add the packet of cream powder.
