Ingredients:

\r\n6 eggs

\r\n

1 1/2 cups all-purpose flour

\r\n

1 cup sugar

\r\n

1 tablespoon baking powder

\r\n

100 ml liquid milk

\r\n

60 ml vegetable oil

\r\n

1 tablespoon white vinegar

\r\n

1 teaspoon salt

\r\n

1 teaspoon vanilla

\r\n

Preparation:

\r\n

Separate the egg whites from the yolks and place each in a separate bowl.

\r\n

Beat the egg whites with the vinegar and a pinch of salt until stiff foams form.

\r\n

Beat the egg yolks with the vanilla, then gradually add the sugar and beat for about 5 minutes, then add the oil.

\r\n

Sift the flour and baking powder aside. Begin adding the flour mixture alternately with the milk. Continue mixing, then fold the egg whites into the batter very slowly, using a wooden spoon, from bottom to top so the batter doesn’t deflate.

\r\n

Line the baking sheet with parchment paper and pour the batter onto it.

\r\n

Bake the cake in a preheated oven at 180°C (350°F).

\r\n

Bake for about 10–15 minutes maximum to avoid overbaking so the roll stays soft.

\r\n

When done, remove the cake from the oven and roll it up while still warm.

\r\n

Roll the cake in a towel, wrap well, and let it cool completely.

\r\n

When cooled, carefully unroll and fill with a thin layer of fresh cream, then a layer of strawberry or berry jam, or any jam you have as preferred.

\r\n

Re-roll and coat the outside with fresh cream, decorating with fresh fruit as available and to taste, and with flowers as well.

\r\n

The flowers used to decorate this Swiss roll are real but not edible and were removed when slicing the cake; they are for decoration only.

\r\n\r\n

Fresh cream filling:

\r\n

1 large carton of whipping cream

\r\n

4 tablespoons powdered sugar, or to taste

\r\n

1 packet powdered whipping cream

\r\n

How to prepare the fresh cream:

\r\n

Place the mixer bowl and whisk in the fridge or freezer for at least an hour before whipping the cream so they are very cold when used.

\r\n

Pour the liquid cream into the mixer bowl.

\r\n

Gradually add the powdered sugar during whipping and adjust sweetness to taste. Also add the powdered cream packet.

\r\n

Whip on high speed for about 8 minutes or until the cream thickens well and is suitable for decorating.
