  • 3 egg whites at room temperature
  • 1 cup very finely ground almonds
  • 3/4 cup powdered sugar
  • 1/4 cup granulated sugar
  • Vanilla extract
  • 2 tablespoons cocoa powder
  • Do not bake the macarons before one hour to allow a crust to form on the surface
  • Note: One secret to successful French macarons is that the almonds must be ground extremely finely...

Method

  1. Whisk the egg whites, ensuring no yolk is present even in the smallest amount... whisk the whites for 4 minutes, add the granulated sugar and vanilla, and continue whisking for at least 8 minutes at the highest speed in an electric mixer.

  2. Then sift the powdered sugar, cocoa and almonds and add them in stages over the meringue (egg mixture), folding with a wooden spoon from bottom to top to combine the ingredients...
  3. Put the mixture into a pastry bag or piping bag and pipe 3 cm circles onto parchment paper, filling by pressing the bag until each circle is about 0.5 cm thick
  4. Do not bake the macarons before one hour to allow a crust to form on the surface
  5. Bake them for only 7 to 10 minutes in a preheated oven at 140–150°C, and fill them after they cool with Nutella chocolate
