Method
- Whisk the egg whites, ensuring no yolk is present even in the smallest amount... whisk the whites for 4 minutes, add the granulated sugar and vanilla, and continue whisking for at least 8 minutes at the highest speed in an electric mixer.Timers: 4 min, 8 min
- Then sift the powdered sugar, cocoa and almonds and add them in stages over the meringue (egg mixture), folding with a wooden spoon from bottom to top to combine the ingredients...
- Put the mixture into a pastry bag or piping bag and pipe 3 cm circles onto parchment paper, filling by pressing the bag until each circle is about 0.5 cm thick
- Do not bake the macarons before one hour to allow a crust to form on the surface
