How to Make Smoked Potatoes
A new way to prepare potatoes. This recipe is somewhat similar to batata harra, but adding charcoal gives it a very distinctive smoky flavor. Try it as part of your salad and appetizer spread.

- 4 potatoes
- 1 large dry onion
- 1 cup chopped parsley
- Juice of 1/2 lemon
- Red pepper, to taste
- A pinch of ground cumin
- A pinch of dried coriander
- A dash of black pepper
- Salt
- 1 teaspoon butter or ghee
- 1 piece of charcoal
Method
- Fry the potatoes, cut into rounds or cubes as desired. Fry the potatoes until browned, then set aside.
- Slice the onion into very thin strips or slivers. Add the chopped fresh parsley over the onion, then add the lemon juice.
- Add the chopped red pepper and all the spices: cumin, dried coriander, black pepper, and salt.
- Mix the potatoes, parsley, and onion. Place the piece of charcoal in a small dish with a little ghee or butter and cover it with aluminum foil. Then place the wrapped charcoal in the potato dish (as shown in the accompanying picture) and cover the dish so the potatoes absorb the charcoal flavor.
