How to Make Semolina Maamoul

- 3 cups mixed semolina
- 1 cup fine flour
- 1/2 cup sugar
- 1 1/2 cups ghee
- 1 teaspoon ground mahlab
- 1 cup water with a pinch of orange blossom water and a pinch of rose water
- For the filling:
- 1 cup pistachios or any kind of nuts
- 1 teaspoon ghee
- Regular sugar and powdered sugar, as desired
- A pinch of rose water
- A pinch of orange blossom water

Method
- Toast the pistachios briefly over low heat until their aroma comes out. Add a small spoon of ghee, the sugar and a splash of orange blossom and rose water and mix, then remove the filling from the heat.
- For the dough, put the mixed semolina in a large bowl with the sugar. Mix well without adding the cup of farikha flour. Add the ghee and rub the semolina well with it until all the melted ghee is absorbed. Cover the bowl with a cloth or plastic wrap and let the dough rest overnight, about 12 hours.Timers: 720 min
- After the dough has rested, add the farikha flour and mix a little, then add mahlab and a cup of water with orange blossom and rose water. Knead well by hand. Place the dough in the fridge and let it rest an additional 4 to 6 hours.Timers: 360 min
- After the time has passed, roll the dough into small balls, fill each ball with a little filling and seal, then press them into the wooden maamoul mold to take the mold's shape.
- Bake the semolina maamoul in the oven at medium heat until done.
- Serve the maamoul when cooled.
