Method
- Wash the dark-colored sweet red peppers suitable for paprika. Dry the peppers and cut them lengthwise into slices after removing all the seeds.
- Spread the pepper slices on a large baking tray and place the tray outdoors in the sun for 3 days. Turn the slices from time to time and cover the tray at night or bring it indoors to protect from moisture.
- On the fourth day, place the red pepper slices on an oven tray and put them into an oven preheated on the top heat. Keep the tray away from direct heat and watch carefully so the slices do not burn, turning them constantly until they are completely dry and brittle.
- Remove the pepper slices from the oven and set them aside to cool completely, then grind them to a fine powder and sift them.
- After that, sun the paprika for a while and store it in an airtight container in the refrigerator.
