Ingredients
- peeled and chopped pumpkin
- 1 tablespoon oil
- 1 teaspoon ghee
- 1 onion, chopped
- 1 potato
- 1 carrot
- celery
- fresh ginger
- 3 cups water
- salt
- a pinch of nutmeg
- a pinch of black pepper
- 1/2 cup cooking cream - optional
Method
- Place the pumpkin pieces in a pot over the heat with the oil and ghee and stir
- Finely chop the onion and add it to the pumpkin
- Add the chopped carrot and potato in turn, and stir just until the vegetables take on a little color
- Add the celery, a small piece of ginger, and 3 cups of water (or as much as needed for the amount of pumpkin), then let everything come to a boil over high heat
- Reduce the heat as soon as it boils, and let the pumpkin and other vegetables cook over low heat
- When the vegetables are fully cooked, blend the soup using a blender or food processor
- Return the soup to the pot and add the salt, pepper, and cream. Let the pumpkin soup boil for 2 minutes before turning off the heat. You can add a little water at this stage if the soup is too thick, or let it boil a little longer if it is too thinTimers: 2 min
