Pumpkin soup .. with a tried-and-tested homemade recipe you’re sure to love :) Pumpkin on its own can be quite sweet, so you need to add distinctive flavors that complement it and help bring it out! This recipe is delicious and we recommend it!

Ingredients

  • peeled and chopped pumpkin
  • 1 tablespoon oil
  • 1 teaspoon ghee
  • 1 onion, chopped
  • 1 potato
  • 1 carrot
  • celery
  • fresh ginger
  • 3 cups water
  • salt
  • a pinch of nutmeg
  • a pinch of black pepper
  • 1/2 cup cooking cream - optional

Method

  1. Place the pumpkin pieces in a pot over the heat with the oil and ghee and stir
  2. Finely chop the onion and add it to the pumpkin
  3. Add the chopped carrot and potato in turn, and stir just until the vegetables take on a little color
  4. Add the celery, a small piece of ginger, and 3 cups of water (or as much as needed for the amount of pumpkin), then let everything come to a boil over high heat
  5. Reduce the heat as soon as it boils, and let the pumpkin and other vegetables cook over low heat
  6. When the vegetables are fully cooked, blend the soup using a blender or food processor
  7. Return the soup to the pot and add the salt, pepper, and cream. Let the pumpkin soup boil for 2 minutes before turning off the heat. You can add a little water at this stage if the soup is too thick, or let it boil a little longer if it is too thin
