How to Make Peanut Stew

A new stew from African cuisine: peanut stew. Try making this stew as a change from the usual traditional dishes.

Ingredients

Start here, then move straight into the method.

  • 1½ kilos chicken breasts with bone
  • 1 lemon
  • A jar of about 400 g of ready-made peanut butter
  • 2 dry onions
  • 1 small cup red oil
  • 1 small cup vegetable oil
  • ½ kilo carrots
  • ½ kilo sweet potatoes
  • Hot pepper or chili, as desired
  • 2 ripe tomatoes
  • 1 liter water
  • A pinch of black pepper
  • 2 tablespoons tomato sauce or paste
  • 1 chicken stock cube
  • The consistency of the peanut stew should not be too thick nor too thin .. when serving, present the vegetables and chicken in a bowl with the broth alongside cooked white rice

Method

Follow the cooking sequence without leaving the page.

  1. Wash the chicken breasts well with water and vinegar, then place them in a colander. Rub them with lemon and cinnamon, then fry them in a little oil until browned. Add enough boiling water to cover the chicken, add the spices and a piece of lemon, and boil the chicken until cooked through.
  2. When the chicken is cooked, remove the bones and set the meat aside, keeping the broth. Take about 3 cups of the chicken cooking broth and add the jar of peanut butter, then dissolve the peanut butter in the cooking liquid and set the mixture aside...
  3. In a deep pot, add the red oil and vegetable oil. If red oil is not available, you can use only vegetable oil. Sauté the two finely chopped onions, the carrots, and the sweet potatoes cut into medium pieces. Add the hot pepper, if desired.
  4. Stir the onions and vegetables for about 5 minutes, then add the finely chopped red tomatoes and cover the pot.

  5. Prepare about 1 liter of boiling water and pour it over the onions and vegetables, along with a pinch of black pepper, 2 tablespoons tomato paste, and the chicken stock cube. Let the ingredients simmer over low heat for about half an hour.
  6. Then add the peanut butter that we dissolved in the chicken cooking broth, stir the ingredients, and let them boil for about 5 minutes. Finally, add the chicken pieces and let them boil with the mixture for a few minutes, then turn off the heat.

  7. The stew should not be too thick or too runny. To serve, place the vegetables and chicken in a bowl with the broth alongside cooked white rice.
