Ingredients
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 3 ripe bananas
- 1/4 cup yogurt
- pinch of salt
- 3 cups all-purpose flour
- small pinch of baking soda
- 1/2 teaspoon baking powder
Method
- Beat the eggs and vanilla for several minutes, then gradually add the sugar and oil while continuing to beat.
- Mash the ripe bananas and mix them with the yogurt, then add them to the egg mixture.
- Gradually add the flour, baking soda and baking powder to the mixture, and stir with a wooden spoon.
- Add nuts as desired — walnuts and raisins — and fold lightly, then pour the batter into a cake pan or mold lightly greased with a little tahini.
- Bake the banana cake in a preheated oven at 180°C for about 45 minutes or until the cake is fully cooked and risen, adjusting for your oven's strength.Timers: 45 min
- It is preferable not to frost the banana cake with cream to preserve its light flavor.
