Ingredients

  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 3 ripe bananas
  • 1/4 cup yogurt
  • pinch of salt
  • 3 cups all-purpose flour
  • small pinch of baking soda
  • 1/2 teaspoon baking powder

Method

  1. Beat the eggs and vanilla for several minutes, then gradually add the sugar and oil while continuing to beat.
  2. Mash the ripe bananas and mix them with the yogurt, then add them to the egg mixture.
  3. Gradually add the flour, baking soda and baking powder to the mixture, and stir with a wooden spoon.
  4. Add nuts as desired — walnuts and raisins — and fold lightly, then pour the batter into a cake pan or mold lightly greased with a little tahini.
  5. Bake the banana cake in a preheated oven at 180°C for about 45 minutes or until the cake is fully cooked and risen, adjusting for your oven's strength.

  6. It is preferable not to frost the banana cake with cream to preserve its light flavor.
