  • 1 kilo lamb filet, or as much as available
  • 1/2 head garlic, peeled
  • 2 hot peppers, red or green
  • 1/2 teaspoon whole cloves
  • 1 teaspoon rosemary
  • 1/2 teaspoon whole black peppercorns
  • 1 teaspoon cardamom pods
  • 2 bay leaves
  • Salt to taste

Method

  1. Cut the lamb filet lengthwise, making the cut only to the middle of the meat.
  2. Open the meat and stuff it with garlic, pepper, seasonings, and salt, then close it and tie it with kitchen twine similar to a roast. Fry the lamb filet in a little fat or oil, turning so it takes on a golden color on all sides.
  3. Place the filet in a roasting pan and put it in the oven for at least one hour or until cooked through.
  4. Serve the lamb filet with white rice and the sauce made from the meat stock. Also serve with roasted or boiled vegetables such as broccoli, potatoes, carrots, and peas.
