How to Make Indian Onion Bhaji Omelet
An Indian omelet ... a truly easy recipe. It calls for chickpea flour, but you can substitute regular flour if you prefer and use what you have on hand. The coriander and cumin flavor in this omelet is strong!

An Indian omelet made with simple ingredients .. traditionally prepared by Indians with chickpea flour .. but it can be replaced with regular flour!
The dish is called onion bhaji
and the result is similar to an omelet!! :)
Ingredients
- 1 cup chickpea flour or regular flour
- 2 eggs
- 3 onions, sliced
- 2 tablespoons chopped fresh coriander
- 1 teaspoon dried coriander
- 1 tablespoon whole cumin seeds or 1 teaspoon ground cumin
- Salt and spices to taste
- 1 cup water, or as needed
Method
- Whisk the eggs, then add all the ingredients and mix well. Loosen the batter with water... you may use the full cup of water, or a little less or slightly more.
- Heat the oil, take a ladleful of the mixture and add it to the oil, then spoon some of the hot oil over the pieces.
- Fry the whole batch this way.
- Serve the omelet immediately while it is hot.
