Ingredients

  • 4 large bunches fresh molokhia
  • / 5 chicken breasts
  • 1 large bunch fresh coriander
  • Garlic

Method

  1. Boil the chicken with aromatics and boiling spices and an onion, and leave it for about an hour over medium heat. After the chicken is cooked, remove it and reserve the broth. Wash the molokhia after cleaning it well. In the pot, heat corn oil and fry the minced garlic and coriander with chili or hot pepper as desired...
  2. After that, add the molokhia gradually while stirring until it wilts, then add enough chicken broth to cover them and let them simmer together over medium heat for about half an hour...
  3. During this time pull the chicken meat from the bones; after about half an hour add the chicken to the molokhia and leave for about another half hour, then turn off the heat.
  4. Add lemon juice over the molokhia, stir lightly, and serve it with cooked rice...
  5. Optionally, for a stronger flavor you may leave a little chopped coriander and garlic raw (unfried) and add them to the molokhia when adding the chicken
