Ingredients

  • 3 cups freekeh, washed and soaked in warm water
  • 8 cups water
  • 1 onion, finely chopped
  • 2 chicken breasts, cut into pieces
  • a knob of butter
  • 2 tablespoons vegetable oil
  • a pinch of salt
  • a pinch of cumin
  • a pinch of black pepper
  • 2 chicken bouillon cubes

Method

  1. Heat 2 tablespoons of oil in a pot over the stove and add the chopped onion with a pinch of salt; stir until the onion softens. Then add the chicken with the spices and the 2 chicken bouillon cubes and stir for 5 minutes.
    Timers: 5 min
  2. Add the freekeh with spices and water and cover the pot. When it comes to a boil, leave it on the heat for one hour, then turn off the heat.
  3. Serve the freekeh and chicken soup with lemon and toasted bread
