  • Small amount of dried beans, soaked in water 6 hours before cooking
  • 1/2 kilo small pieces of meat or bone-in meat
  • 6 tomatoes
  • 1 onion
  • A head of garlic, about 7 cloves
  • A bunch of fresh coriander
  • 2 tablespoons tomato paste
  • Salt
  • 1 teaspoon ground cumin
  • A pinch of black pepper
  • Hot chili pepper, as desired
  • 3 tablespoons vegetable oil

Method

  1. Chop the garlic, onion, and coriander and put them in a pot. Fry them in the vegetable oil with a chili pepper, a pinch of salt, a pinch of black pepper, a pinch of meat spice, and one teaspoon ground cumin....
  2. Stir until the onion is nearly cooked, add the meat and stir, then cover the pot and let the meat cook on low heat.
  3. Place the beans over the meat with the tomatoes cut into quarters and the tomato sauce or paste, and cover the ingredients with hot water...
  4. When the bean stew boils, reduce the heat and let it simmer gently for about one hour...
