How to Make Chocolate Sablés

- 1 1/2 cups flour
- 1/4 cup cocoa powder
- 3/4 cup powdered sugar
- 180 grams butter
- 1 egg
- 1 tablespoon liquid milk
- a pinch of vanilla
- a pinch of salt
- dark chocolate melted in a double boiler
- coarsely ground pistachios for garnish

Method
- Put all the dough ingredients — flour, cocoa, powdered sugar, butter, an egg, 1 tablespoon milk, and a pinch of vanilla and salt — in an electric mixer and mix well; alternatively, you can knead the ingredients by hand.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour to rest.
- Place the dough between two sheets of plastic or parchment paper and roll it out. Cut the dough into the shapes you want.
- Arrange the sablés on a baking tray and bake at 180°C for about 8 to 10 minutes only.
- When the sablés have cooled, fill them with melted chocolate and sandwich two pieces together. Also dip the cookies in chocolate on the outside and garnish with pistachios.
- Place the sablés in the refrigerator until the chocolate sets.
