- 1/2 kilogram mozzarella cheese
- 1 cup flour
- 1 cup water
- 1/2 cup sugar
- 1/4 cup rose water
- cream or qimr
- mastic

Method
- Dissolve the sugar in the water and place over heat. As soon as it boils, add half the orange blossom water and the cheese.
- When the cheese begins to melt, gradually add farikha flour (طحين الفرخة) and stir until the mixture thickens and you obtain a dough.
- Lift the dough upward with the spoon while stirring. Add the remaining orange blossom water, ground mastic, and a pinch of sugar, then remove the halva from the heat.
- Spread the halva onto a piece of plastic wrap brushed with syrup (qater). When it cools, fill it with fresh clotted cream or qimeer and cut it.
- Garnish the cheese halva with pistachios and lemon blossom, and serve it cold with syrup (qater) or shireh.
