Ingredients
- 4 and a half cups flour
- half a cup sugar
- half a teaspoon salt
- 1 tablespoon yeast
- quarter cup yogurt
- quarter cup melted butter
- 1 cup lukewarm liquid milk
- half a cup oil
- 2 eggs
- 1 teaspoon white vinegar
- We recommend making Turkish simit in Rana's way as well.
- Also from Rana, here is cup madlouka
- Also from Rana's delicious desserts, here is mini shaabiyat
Method
- Place the yeast, sugar, and lukewarm milk in a bowl and wait about 10 minutes until the yeast activates.Timers: 10 min
- Add the remaining ingredients and knead well until you get a smooth, cohesive dough.
- Let it rest for 1 hour, or until it has risen well.Timers: 60 min
- Divide it into balls of the desired size, then roll each piece out with a rolling pin and fill as desired. Roll it up like a log and seal the edges together (you can also shape it into braids or other shapes as desired).
- Lightly score the top of the brioche with the tip of a knife, without cutting all the way to the filling.
- Brush the top with a little milk and sprinkle with sesame seeds and nigella seeds (optional).
- Place the pieces on parchment paper on a baking tray, or on a tray lightly greased with oil.
- Bake the brioche in a preheated oven at 180°C. It will need about 12 to 15 minutes from the bottom, and 1 to 2 minutes to brown from the top.Timers: 15 min, 2 min
- Serve the brioche at room temperature.
