  • 3 cups all-purpose flour
  • 1/4 cup corn flour
  • 1/4 cup oil
  • 2 tablespoons yogurt
  • 1 tablespoon salt
  • A pinch of sugar
  • 1 teaspoon baking powder
  • 1 tablespoon yeast
  • about 1 1/4 cups warm water or as needed

Method

  1. Rub the flour with the ingredients and add the warm water gradually until you get a cohesive, soft dough...
  2. Divide the dough into rounds and cover with a damp cloth for about one hour..
  3. Mix a little white flour and a little corn flour and use it to roll out the dough balls... Roll each piece until somewhat thin and cover again with the cloth ...
  4. Place a nonstick griddle over low heat and cook the flatbreads on both sides; do not brown them.. just for about 2 minutes or until they turn light... then cover the tortillas with a cloth so they do not harden and wrap them in a bread bag...

  5. Note: If corn flour is not available it can be replaced with white flour
