Ingredients

  • 1 kilo sifted flour
  • 1/2 cup wheat bran or cracked wheat or ground oats or semolina
  • 2 tablespoons yeast
  • 2 tablespoons sugar
  • 1/2 cup toasted sesame seeds
  • 1 tablespoon whole anise seeds
  • 1 tablespoon ground anise
  • 1 tablespoon kaak spice mix
  • 1 teaspoon turmeric
  • 1 medium baking powder
  • 1 teaspoon salt
  • 1/2 cup oil
  • 600 to 700 ml lukewarm water, as needed

Method

  1. Mix the dry ingredients, then add the oil and rub the mixture with your hands until it absorbs the oil
  2. Gradually add the lukewarm water and knead well for at least 15 minutes
    Timers: 15 min
  3. Oil your hands and bring the dough together
  4. Let the dough rest for 1 hour
    Timers: 60 min
  5. After the time has passed, cut the dough into small to medium pieces and roll the pieces lengthwise with your hands
  6. Let them rest for 10 minutes on parchment paper or a piece of kitchen plastic
    Timers: 10 min
  7. Heat plenty of oil and fry the zalabia, turning until browned
