Ingredients
- 1 kilo sifted flour
- 1/2 cup wheat bran or cracked wheat or ground oats or semolina
- 2 tablespoons yeast
- 2 tablespoons sugar
- 1/2 cup toasted sesame seeds
- 1 tablespoon whole anise seeds
- 1 tablespoon ground anise
- 1 tablespoon kaak spice mix
- 1 teaspoon turmeric
- 1 medium baking powder
- 1 teaspoon salt
- 1/2 cup oil
- 600 to 700 ml lukewarm water, as needed

Method
- Mix the dry ingredients, then add the oil and rub the mixture with your hands until it absorbs the oil
- Gradually add the lukewarm water and knead well for at least 15 minutesTimers: 15 min
- Oil your hands and bring the dough together
- Let the dough rest for 1 hourTimers: 60 min
- After the time has passed, cut the dough into small to medium pieces and roll the pieces lengthwise with your hands
- Let them rest for 10 minutes on parchment paper or a piece of kitchen plasticTimers: 10 min
- Heat plenty of oil and fry the zalabia, turning until browned
