How to Make a Plate of Kibbeh Nayeh

Ingredients

- 1 kilo kibbeh meat
- fine bulgur, from 1 cup to 1 1/2 cups, as needed
- kibbeh spice mix (ready-made kibbeh seasoning)
- some green mint leaves
- 1 small white onion
- a small piece of red sweet pepper
- a generous drizzle of olive oil
- salt
- hot pepper, to taste

Method
Follow the cooking sequence without leaving the page.
- Grind the meat in a kibbeh machine until smooth, then refrigerate it... it's important to keep it cold
- Soak the bulgur with just enough water to soften it... a small amount is enough to moisten the bulgur only; leave it for a while to soften and use it immediately while still tender
- Prepare the kibbeh spice mix (kamouna) and add mint, onion, red pepper, salt, hot pepper, and a handful of fine, unsoaked bulgur... then grind everything together
- In a bowl, work the bulgur well by rubbing it with your hands in a friction motion until the grains break down and soften... then add the prepared kamouna and continue rubbing
- After a few minutes of rubbing the bulgur and kamouna, add the meat, olive oil, and salt, and knead everything until well combined
- Spread the kibbeh on a large bowl or plate, drizzle with olive oil and serve immediately; it can also be shaped by hand into small patties
