Ingredients
- 1 kilo lean beef
- a whole head of garlic, about 7 cloves
- 2 eggs
- 1 cup crushed rusk (dry biscuit crumbs)
- a pinch of mixed spices
- a pinch of ground black pepper
- a pinch of red pepper
- 1/2 small cup vinegar
- 1 tablespoon pepper molasses
- 1 tablespoon tomato paste

Method
- Mix the meat with the various spices, add the mashed garlic and the yolks of 2 eggs, and mix well with the crushed rusk until you obtain a homogeneous mass.
- Add, as desired, chopped pitted olives or Halabi pistachios.
- Knead the mixture and shape it into a cylinder, then coat it with egg white and roll it in vegetable oil.
- Boil the cylindrical meat for three quarters of an hour with water, vinegar, pepper molasses, and tomato paste.
