Ingredients:\n\n1 kg lean red meat\n\nAbout 7 garlic cloves\n\n2 eggs\n\n1 cup ground crackers\n\nPinch of mixed spices\n\nPinch of black pepper\n\nPinch of red pepper\n\n1/2 cup vinegar\n\n1 tablespoon pepper paste\n\n1 tablespoon tomato paste\n\n \n\n \nPreparation:\n\nMix the meat with the various spices, add the minced garlic and the yolks, and mix well with the ground crackers until a homogeneous mass forms.\n\nAdd, if desired, chopped olives without pits or pistachios.\n

Knead the mixture and shape it into a cylinder, then brush it with egg whites and roll it in vegetable oil...

Boil the meat cylindrical for about three quarters of an hour with water, vinegar, pepper paste, and tomato paste.

  • 1 kilo lean beef
  • a whole head of garlic, about 7 cloves
  • 2 eggs
  • 1 cup crushed rusk (dry biscuit crumbs)
  • a pinch of mixed spices
  • a pinch of ground black pepper
  • a pinch of red pepper
  • 1/2 small cup vinegar
  • 1 tablespoon pepper molasses
  • 1 tablespoon tomato paste

Method

  1. Mix the meat with the various spices, add the mashed garlic and the yolks of 2 eggs, and mix well with the crushed rusk until you obtain a homogeneous mass.
  2. Add, as desired, chopped pitted olives or Halabi pistachios.
  3. Knead the mixture and shape it into a cylinder, then coat it with egg white and roll it in vegetable oil.
  4. Boil the cylindrical meat for three quarters of an hour with water, vinegar, pepper molasses, and tomato paste.
