- 2 dry onions
- 5 crushed garlic cloves
- whole uncrushed garlic cloves
- 1 kilogram fresh green beans
- 1/2 cup water
- 1/2 kilogram ripe red tomatoes
- 2 tablespoons tomato paste or tomato sauce
- salt
- black pepper
- hot pepper or chili to taste
Method
- Chop the onions and fry them in a little vegetable oil in the pot until they soften. Add the crushed garlic and leave a few whole garlic cloves uncrushed; the number depends on your preference.
- Add the cleaned and washed green beans and stir. Reduce the heat, add 1/2 cup water, and let the mixture simmer on low heat.
- Meanwhile, peel and chop about 1/2 kilogram of ripe red tomatoes. When the beans are close to done, add the chopped tomatoes on top with a sprinkle of salt, black pepper, hot pepper or chili to taste, and two tablespoons of tomato paste.
- Let the mixture cook over low heat until all the ingredients are tender.
- You can add a tablespoon of lemon juice to taste a few minutes before removing the green beans in oil from the heat.
- Serve the green beans in oil with cucumber, green pepper, onion, cucumber salad, and yogurt.
