- 2 cups farikha flour or fine semolina
- 5 cups flour
- 2 cups grape molasses
- 2 cups liquid ghee
- 1/2 cup olive oil
- 1 tablespoon ground anise
- 1 tablespoon ground mahlab
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- Sesame for garnish
- After that, we add the flour gradually and continue kneading. We obtain a firm, slightly stiff dough.
- We take a small piece of dough and shape it by hand or with a kaak mold. We dip the kaak on the top side in sesame. We arrange the kaak pieces on baking trays, and put them into a preheated oven, placing them on the middle rack.
Method
- We mix the fine semolina with the ghee, oil, and grape molasses, then add the remaining ingredients and aromatics.
- Then, we add the flour gradually and continue kneading. We obtain a firm, slightly stiff dough.
- We take a small piece of dough and shape it by hand or with a kaak mold. We dip the kaak on the top side in sesame. We arrange the kaak pieces on baking trays, and put them into a preheated oven, placing them on the middle rack.
- When the kaak is baked and the bottom takes a light color, we brown the top so the kaak disc has a uniform color on both sides.
