Freekeh with meat is one of the most delicious recipes, and it can also be prepared with chicken. Who makes it with rice? Here is this method with rice for making the tastiest freekeh dish.

Ingredients

  • 2 cups freekeh
  • 4 small pieces of fat or caul fat, as it is commonly called
  • 1 cup rice
  • Half a kilo of small diced meat (lamb or beef)
  • Seasonings for boiling the meat
  • Half a teaspoon black pepper
  • Salt
  • Ghee or oil, as desired
  • Nuts, as desired

Method

  1. First, boil the meat well with seasonings of your choice, such as green cardamom, cloves, cinnamon sticks, fresh ginger, black peppercorns, a dried onion, and bay leaves.
  2. Wash the freekeh grains and drain them.
  3. In a pot over medium heat, add oil or ghee, then add the pieces of fat and sauté or stir them until they begin to render a little. Add the freekeh and half a teaspoon of black pepper, and stir for about 5 minutes.

  4. Cover with the meat cooking liquid, so that it rises about 1 cm above the freekeh, and stir.
  5. When the broth comes to a boil, reduce the heat, cover the pot, and leave the freekeh over low heat until the water dries up.
  6. Then add more hot meat broth, cover the pot again, and leave it. Continue adding broth in stages as the freekeh needs it until it is fully cooked.
  7. In another pot, prepare the rice with the meat broth. Add a little oil or ghee to the pot, stir the rice, then add enough meat broth for the rice needs (2 cups of broth for every 1 cup of rice).
  8. When the water or broth boils and reaches the level of the rice, reduce the heat and cover the pot until the rice is cooked.
  9. Arrange a layer of freekeh, then a layer of rice, then another layer of freekeh in a pot or bowl, then invert it onto a wide serving platter and arrange the meat pieces on top.
  10. Garnish with fried nuts and serve the freekeh with meat immediately with cucumber yogurt or green salad, as desired.
