Ingredients

  • 1 can cooked fava beans (foul mudammas)
  • 2 tablespoons tahini
  • 2 garlic cloves, crushed
  • 2 lemons (for juicing)
  • Salt, to taste
  • 1 teaspoon ground cumin
  • Water, as needed
  • Chopped parsley for garnish

Method

  1. Open the can of fava beans, rinse well, and place the beans in a pot with fresh water. Bring to a boil over medium heat.
  2. Drain the beans, transfer to a bowl, and mash them slightly.
  3. Add the crushed garlic, ground cumin, and tahini; stir until combined.
  4. Add the lemon juice and salt, and mix again.
  5. Slowly add water in a thin stream while stirring until the mixture reaches a slightly thick but spreadable consistency. Garnish with chopped parsley.
  6. Note: You can prepare this recipe using pre-soaked and boiled fava beans the same way, but we used canned beans here for a quick, time-saving version.
