The flaky pie is a very special recipe! We chose a meat and potato filling, but you can get creative with any filling you like.

Ingredients

  • Dough:
  • 600 g flour or 4 cups
  • 1 teaspoon yeast
  • 1 teaspoon vinegar
  • 1 teaspoon sugar
  • Salt
  • Water for kneading: 2½ cups or as needed depending on the flour
  • For layering the dough:
  • Vegetable oil
  • 100 g melted butter
  • For brushing the dough:
  • Beaten egg with liquid milk
  • or
  • Beaten egg with vinegar
  • Filling:
  • Ground meat
  • Chopped onion
  • Minced garlic
  • Grated carrot
  • Potato, cut into small cubes
  • Bell pepper, diced
  • Meat seasoning
  • Mixed spices
  • Black pepper
  • Ground cinnamon
  • Mozzarella cheese (to be sprinkled over the filling)

Method

  1. Mix all the dry ingredients, then gradually add the water while kneading well until you get a soft, cohesive dough.
  2. Dust a clean work surface with flour, place the dough on it, and knead until it becomes soft and no longer sticky.
  3. Brush it with a little oil and cover it with plastic wrap for only five minutes to rest. Do not let it rise.
  4. Work with it immediately. Divide the dough into 4 balls and cover them.
  5. Roll out the first ball into a rectangle, using vegetable oil whenever needed, until it becomes very thin.
  6. Brush it with melted butter and fold it into a square, brushing each layer with butter.
  7. Set the first piece aside, then roll out the second ball the same way. Before folding it, place the first square in the center, then fold the second dough over the first square to form a large second square, brushing each layer with butter.
  8. Roll out the third and fourth balls the same way, so that you end up with two large squares.
  9. Roll out the first large square a little, then cut it lengthwise into two pieces. Place the filling in the center of each piece and sprinkle the cheese over it (mozzarella), then close the dough over the filling. Do the same with the second large square.
  10. Place the four filled pieces on a baking tray lined with parchment paper, with the sealed side facing down. Cut the dough on top with a knife, but do not cut all the way through to the filling.
  11. Brush the top with milk and egg, or vinegar and egg, as desired.
  12. Place the tray in a preheated oven at 200°C until the bottom is golden, then brown the top.
  13. Fry the finely chopped onion in a little vegetable oil until softened.
  14. Add the garlic and stir until it softens as well.
  15. Add the meat and continue stirring until the meat changes color, then add the remaining vegetables and spices and stir.
  16. Leave the filling over low heat until all the ingredients are cooked through.
  17. Let the filling cool well before using it.
