Eish El-Saraya — a homemade recipe, simple and delicious

Ingredients

Start here, then move straight into the method.

  • 10 slices of soft white sandwich bread with the crusts removed
  • 4 cups milk
  • 5 tablespoons cornstarch
  • 3 tablespoons sugar
  • 1 tablespoon orange blossom (or flower) water
  • 1 tablespoon rose water
  • One can of clotted cream (qimar) — optional
  • Pistachios for garnish
  • Syrup (Qatr / Sheera)
  • 3/4 cup sugar
  • 1 cup water
  • a squeeze of lemon juice

Method

Follow the cooking sequence without leaving the page.

  1. Place the toast pieces on a baking tray and put them in the oven for a few minutes until they are lightly golden. Remove and let them cool.
  2. Prepare the syrup by putting the sugar with a little water and a small squeeze of lemon into a saucepan over the heat and stir until you get a light brown color, then carefully add the rest of the water and let the syrup boil for two minutes.
  3. Pour the syrup evenly over the toast pieces.
  4. Prepare the cream: put the milk, cornstarch, and sugar in a pan, stir well and place over heat, stirring constantly until the mixture thickens well.
  5. Spread the mixture over the toast, and if you want to use qaimar (thick cream), mix it with the cornstarch-and-milk mixture before pouring it over the toast.
  6. Smooth the top well until you obtain an even surface.
  7. Leave Eish El-Saraya to cool at room temperature, then place it in the refrigerator to chill well.
  8. When serving, garnish with pistachios.
