Eggplant pizza... you could call it a "fake" pizza because we'll replace the dough with eggplant. What do you think? :) Light, easy, and definitely vegan.

Ingredients

  • 1 large eggplant
  • Salt
  • Oil
  • Pizza sauce
  • Here is a link to make pizza sauce
  • Paprika
  • Onion
  • Olives
  • Mozzarella cheese

Method

  1. Cut the eggplant into long slices about 2 cm thick
  2. Sprinkle salt on them and brush lightly with oil on both sides
  3. Place the eggplant slices on a baking tray, turn the oven on for top heat only and flip them until the eggplant softens on both sides
  4. Remove them from the oven and spread pizza sauce over them, add any vegetables you like, sliced olives and paprika, then sprinkle cheese on top
  5. Turn the oven on from the top again and put the eggplant pizza slices in until the cheese just melts, then serve
