Eggplant rolls stuffed with ground meat and vegetables — a recipe lovers of eggplant will really enjoy.

Ingredients

  • Eggplant
  • Tomatoes
  • Bell pepper
  • Tomato sauce/paste
  • Filling:
  • Ground meat
  • Cinnamon
  • Seven-spice mix
  • Black pepper
  • Salt

Method

  1. Slice the eggplant lengthwise into thin strips and deep-fry them in hot oil.
  2. Set the fried eggplant slices aside and prepare the filling.
  3. Sauté the ground meat in a little oil, then add the spices and salt and cook until the meat is done.
  4. Place a spoonful of the filling on each eggplant slice and roll it up into a neat roll.
  5. Core and stuff some tomatoes and bell peppers as well, if you like.
  6. Arrange the rolls and stuffed vegetables in a baking dish and pour over a tomato sauce (diluted with water so it doesn't fully cover the vegetables).
  7. Bake the eggplant and vegetable rolls with the ground meat in the oven until everything is cooked and the sauce has reduced and thickened.
  8. Serve the eggplant and vegetable rolls with rice.
