Method
- First, fry the fish in plenty of hot oil. In another pot, sauté 2 onions finely chopped in a little oil until the onions turn dark brown.
- Then add about 3 cups of water, plus the heads and tails of the fried fish, the spices, and the salt.
- Let the water boil until it becomes dark brown. We'll use this strained broth to cook the rice.
- In the rice pot, sauté a finely chopped onion until soft, then add the rice, salt, and spices, and add two cups of broth for each cup of rice; you may use plain water if the broth isn't enough. Cover and cook the rice over low heat.
- Remove the bones from the fish and arrange it on top of the rice, garnish with nuts; you can serve tarator or tajin on the side.
