Broccoli soup is the soup you need alongside various Western meat dishes — broccoli's flavor complements them perfectly! It is one of the tastiest, easiest, and most nutritious soups. Here is an easy method.

Ingredients

  • 1 kg broccoli
  • 1 liter cooking cream
  • 1 liter chicken stock (or 2 chicken stock cubes + 1 liter water)
  • Salt
  • 200 g butter
  • 5 tablespoons all-purpose flour
  • 4 slices toasted bread, cut into cubes (croutons)

Method

  1. Wash the broccoli, cut it into small pieces, and set aside.
  2. In a pot over medium heat, melt the butter with the flour and stir well in circular motions or with a whisk.
  3. Add the cooking cream, chicken stock, and salt to taste, and stir well.
  4. Bring to a brief boil to let the cream thicken slightly, then add the chopped broccoli and stir.
  5. Let the broccoli soup simmer over low heat until the broccoli is fully cooked.
  6. Serve the soup with toasted bread cubes (croutons).
