Pastry dough — one simple, versatile recipe
Ingredients
- 5 cups all-purpose flour
- 2 tablespoons yeast
- 1 tablespoon sugar
- A pinch of salt
- 3 tablespoons oil (vegetable or neutral oil)
- 1/2 cup plain yogurt
- 1 1/2 cups warm water, or as needed depending on the flour

Method
- Mix the yeast, yogurt and warm water. Leave for 10 minutes to activate the yeast.Timers: 10 min
- Add the remaining ingredients and knead by hand for 10 minutes (not less). Add water if needed, but in small amounts. You should end up with a cohesive, soft dough.Timers: 10 min
- Let the dough rest for one hour or until ready to use.
- Use this dough for cheese rolls, chocolate rolls, za'atar pastries, pizza, honeycomb pastries and other baked goods.
