Ingredients

  • Boneless chicken breast
  • Flour
  • Black pepper
  • White pepper or mixed spice
  • Ground ginger
  • Garlic powder
  • 2 cloves garlic, crushed
  • Paprika (sweet red pepper powder)
  • Water

Method

  1. Cut the chicken breast lengthwise, keeping the slices slightly thick.
  2. Wash the chicken with salt and vinegar, then with water, and let it drain in a bowl. Put the flour with the crushed garlic and spice mix, add a little water, and mix to obtain a slightly thick batter, similar to cake batter.
  3. Soak the chicken in this mixture and leave it in the refrigerator for some time... at least one hour.
  4. When frying, prepare a bowl and put in it the same components of the chicken marinade—i.e., the flour with the spices but without the water.
  5. Dip the chicken pieces, when removed from the marinade, into the dry flour and spices... then fry them in plenty of hot oil until they brown and are cooked.
  6. Serve the crispy chicken with french fries and coleslaw or another green salad as desired.
