Crepe ingredients:

1 cup flour

1 cup milk

3 eggs

1 teaspoon vanilla

zest of 1 lemon

2 tablespoons oil

1 tablespoon sugar

1 tablespoon white vinegar

How to make crepes:

Beat the eggs with the sugar, then add vanilla, white vinegar, and lemon zest...

Sift the flour with baking powder and add it to the egg mixture... Pour a small amount in a wide circular shape on a non-stick pan and brush with a little oil.

Cook the crepe on both sides, then place on a serving plate and top with pastry cream and fruit or chocolate sauce as desired.

Pastry cream ingredients:

1/4 cup cornstarch

2 tablespoons sugar

2 eggs

Zest of 1 lemon

Vanilla

Pastry cream method:

Heat the milk in a pot until warm, then in a bowl whisk the eggs with vanilla and sugar….

Whisk the eggs well; then add the cornstarch and continue whisking until smooth.

When the milk is warm, gradually add some milk to the egg mixture while stirring to prevent curdling…

Return all the mixture to the pot and continue whisking until thickened, then finally add the lemon zest.
