Ingredients
- 1 cup fine semolina
- 1 cup flour
- 1 cup shredded coconut
- 1 cup yogurt
- 1 cup sugar
- 1 cup oil
- 2 eggs
- 1 tablespoon baking powder
- 1 tablespoon vanilla
- 1 and 1/2 cups syrup to soak the basbousa
- Note:
- It is better to add a tablespoon of butter to the syrup while it is boiling on the stove, then let it cool to room temperature before using it over the hot basbousa

Method
- Whisk the eggs, sugar and vanilla with a whisk or hand mixer.
- Add the oil then the yogurt and mix until combined.
- Add the dry ingredients and mix very well. Grease the pan with tahini then pour the basbousa mixture into it.
- Let the mixture rest in the pan for one hour before placing the pan in the oven.
- After one hour, bake it in the preheated oven at 180°C placed on the middle rack.
- When the coconut basbousa reaches the desired color, remove it from the oven and immediately soak it with cold syrup.
- Serve it cold or at room temperature.
