Ingredients

  • 1 cup fine semolina
  • 1 cup flour
  • 1 cup shredded coconut
  • 1 cup yogurt
  • 1 cup sugar
  • 1 cup oil
  • 2 eggs
  • 1 tablespoon baking powder
  • 1 tablespoon vanilla
  • 1 and 1/2 cups syrup to soak the basbousa
  • Note:
  • It is better to add a tablespoon of butter to the syrup while it is boiling on the stove, then let it cool to room temperature before using it over the hot basbousa

Method

  1. Whisk the eggs, sugar and vanilla with a whisk or hand mixer.
  2. Add the oil then the yogurt and mix until combined.
  3. Add the dry ingredients and mix very well. Grease the pan with tahini then pour the basbousa mixture into it.
  4. Let the mixture rest in the pan for one hour before placing the pan in the oven.
  5. After one hour, bake it in the preheated oven at 180°C placed on the middle rack.
  6. When the coconut basbousa reaches the desired color, remove it from the oven and immediately soak it with cold syrup.
  7. Serve it cold or at room temperature.
