  • 5 eggs at room temperature
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1 and a half tablespoons baking powder
  • 1/2 teaspoon baking soda
  • A dash of vanilla
  • 1 teaspoon lemon zest
  • 1 tablespoon white vinegar
  • 1/2 cup cocoa powder
  • 2 cups all-purpose flour
  • A pinch of salt
  • 1 cup milk

Method

  1. First beat the eggs on high speed in an electric mixer with the vanilla, white vinegar, and lemon zest. Continue beating these ingredients for 10 minutes.
  2. Add the sugar while continuing to beat, then add the oil and continue beating.
  3. Sift the flour with the baking powder, baking soda, and cocoa. Gradually add these sifted dry ingredients over the egg mixture.
  4. Beat all the ingredients together for several minutes until you have a smooth, homogeneous batter.
  5. Grease the cake pan with a little butter and place the cake in a preheated oven at 180°C.
  6. Place the cake pan on the middle rack of the oven for about 45 minutes, but every oven varies so monitor the cake's baking and rising; avoid opening the oven door during the first 30 minutes of baking.
  7. Remove the cake from the oven when baked and set aside to cool completely.
  8. Decorate the cake with chocolate ganache or as desired.
  9. Mix 250 grams of chocolate with a small 250 ml can of hot fresh cream.
