Cheese Sambousek
Cheese sambousek — a crisp, delicious pastry dough made from flour and cornstarch with butter. Filled with a mix of cheeses and parsley; you can also fill with meat.

Ingredients
Start here, then move straight into the method.
- 2 cups flour
- 4 tablespoons butter
- 1/2 cup fine cornstarch (starch)
- 1 teaspoon salt
- 1 teaspoon sugar
- Warm water as needed
- Filling
- Akkawi (sweet) cheese
- Mozzarella cheese
- Halloumi cheese
- A little finely chopped parsley

Method
Follow the cooking sequence without leaving the page.
- Mix the flour, cornstarch, sugar, and salt well.
- Melt the butter, add it to the dry ingredients, and rub together.
- Add the lukewarm water and knead.
- Let the dough rest for one hour.
- Prepare the filling: mix the cheeses (after washing, grating, and draining them) with the parsley.
- When the dough has rested, roll it out thinly and cut into medium-sized squares; fill each, seal with a little cornstarch dissolved in water, and fold into triangles.
- Fry the cheese sambousek in plenty of hot oil, drain and cool, then serve.
