Bulgur with tomatoes, or vegetable bulgur with tomatoes, is an old traditional dish that some people like to make vegetarian, while others add meat to it... It is delicious both ways, especially if the tomatoes are local and in season!!
Ingredients
- 2 cups coarse bulgur, brown or white
- 3 onions
- 2 tablespoons olive oil
- 1 green sweet pepper
- 2 zucchini - optional
- 5 red tomatoes
- 4 cups water
- 1 tablespoon sweet pepper paste
- Salt

Method
- Chop the onion and sauté it in the pot with olive oil until it softens.
- Add the chopped pepper and zucchini and stir until the vegetables soften.
- Add the finely chopped or pureed tomatoes, tomato paste, water, pepper molasses and salt.
- Stir gently and let the water come to a boil.
- Reduce the heat after the water boils, add the bulgur and stir.
- Cover the pot and simmer over low heat until the bulgur is cooked, about 20 minutes.
