Ingredients

  • 1 kg long-grain rice
  • 1 kg lamb or beef, large pieces
  • 1 kg tomatoes
  • 3 onions
  • 2 grated carrots
  • 1 cup ghee (samneh)
  • ½ cup raisins
  • ½ cup peeled almonds
  • 5 cardamom pods
  • 2 cinnamon sticks
  • Salt

Method

  1. Wash the rice then soak it in warm water for one hour.
  2. Slice the onion into thin wedges then fry it in ghee until it turns light brown.
  3. Add the carrots and meat pieces and stir with the onion until the meat browns.
  4. Purée the tomato then remove the skins and add it over the meat, and stir.
  5. Cover them with water then add cinnamon, cardamom pods and salt... cover the pot and leave it over medium heat until the meat is cooked.
  6. Wash the raisins and add them to the meat after it cooks, then add the drained rice... add water if necessary—the water should cover the rice.
  7. Leave the pot on high heat until the water boils, then cover and reduce to medium heat until the rice is cooked.
  8. Meanwhile, fry the almonds in ghee and set them aside.
  9. Pour the Bukhari rice into a serving dish and garnish with the fried almonds.
