Ingredients

  • Beef tongue
  • Water for boiling
  • 10 cardamom pods
  • 2 cinnamon sticks
  • 2 dried limes
  • 10 cloves
  • 1 medium onion, cut into quarters
  • A small piece of lemon
  • The sauce:
  • 1 whole head of garlic, peeled and finely pounded
  • Juice of 2 lemons, or to taste
  • Salt to taste

Method

  1. Wash the tongue well and place it in a pressure cooker (or a regular pot, but it will need more time to cook), then cover it with plenty of water.
  2. Place the pot on the heat and wait until the foam rises to the surface and disappears completely.
  3. Then add the whole spices mentioned, along with the onion pieces and lemon, close the pressure cooker, and leave it on the heat for about one hour.
  4. After one hour, turn off the heat and wait a little, then remove the pressure cooker whistle and let out all the trapped steam. When it has completely settled and all the steam is gone, open the pot and check that the tongue is cooked through.
  5. If the meat is well cooked, remove the tongue and place it on a cutting board.
  6. First, peel off the white membrane that covers the tongue and discard it, then slice the tongue.
  7. In a baking tray or pyrex dish, arrange the tongue slices, pour over one cup of the tongue cooking broth, then drizzle the slices with the lemon juice mixed with the crushed garlic and salt. Place the pyrex dish under the oven grill until the slices are browned.
