Avocado and Qishta dessert... we usually serve avocado juice with cottage-style qishta, but this recipe is a little different.

Ingredients

  • 2 ripe avocados
  • 2 tablespoons sweetened condensed milk
  • 4 tablespoons milk
  • Qishta (Cream):
  • 1 can Nestlé cream (qishta)
  • 2 tablespoons cornstarch
  • 1 cup milk
  • A splash of orange blossom water and rose water
  • For garnish:
  • Seasonal fruits
  • Soaked mixed nuts/dried fruits (e.g., pine nuts, almonds, pistachios, raisins)

Method

  1. Begin by preparing the cream: combine all the cream ingredients cold, then place over medium heat, stirring constantly until the mixture thickens.
  2. Add the rose water and orange blossom water, stir, and remove the cream from the heat.
  3. Transfer the cream to an airtight glass container and let it cool to room temperature, then refrigerate.
  4. To prepare the avocado layer: scoop out the avocado flesh and blend it in a food processor. Add the milk and sweetened condensed milk, and blend until very smooth and creamy.
  5. Soak the nuts and dried fruits—pine nuts, almonds, pistachios, and raisins—in water until ready to use.
  6. Wash some seasonal fruits and cut them into neat shapes for garnish.
  7. In clear glasses, place a layer of the chilled prepared cream at the bottom, then add a layer of the avocado purée. Top with pieces of fruit and the soaked nuts. You can also drizzle honey on top when serving.
