Ingredients

  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 eggs
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 2 tsp lemon zest
  • 2 cups sugar
  • 1 1/4 cups vegetable oil
  • 1/4 cup orange juice
  • 4 cups peeled and finely chopped apples
  • For the cake topping:
  • 1 cup chopped walnuts + 1/2 cup brown sugar + 2 tbsp softened butter (rub together)
  • For decoration:
  • Powdered sugar

Method

  1. Beat the eggs with the vanilla, sugar and lemon zest for 10 minutes, or until the sugar has completely dissolved.
    Timers: 10 min
  2. Add the oil and beat well, then stir in the orange juice and whisk.
  3. Start adding the dry ingredients: add the flour, then the baking powder, then the salt, then the cinnamon, and mix well with the whisk.
  4. Place one-third of the chopped apples in the prepared pan or baking tray lined with parchment paper.
  5. Pour the batter over the apples arranged in the bottom.
  6. Arrange the remaining apples on top, then spread the walnut, brown sugar and butter mixture over the surface of the cake.
  7. Bake the apple and walnut cake in a preheated oven at 180°C for about 1 hour, monitoring as needed depending on your oven.

  8. When the cake has cooled, dust with powdered sugar and serve.
