  • 5 eggs
  • 2 tablespoons white flour
  • 1/4 bunch fresh parsley
  • 1/4 bunch fresh mint
  • 1/4 bunch green onions
  • A pinch of black pepper
  • A pinch of salt
  • A pinch of ground cinnamon
  • 2 tablespoons vegetable oil or olive oil
  • 1 cup mozzarella cheese

Method

  1. Beat the eggs well for 5 minutes. Add salt, mixed spices, and cinnamon—quantities to taste.

  2. Then add finely chopped parsley, mint, and finely chopped green onions; whisk until the mixture is uniform.
  3. In a wide skillet over the heat, add olive oil or vegetable oil as preferred and available, pour in the egg-and-vegetable mixture, and leave the pan over low heat until the eggs are fully cooked.
  4. Finally, add mozzarella cheese and remove the frittata from the heat.
