Green Fava Bean Stew with Meat

Green fava bean stew with meat is a very delicious, healthy, and nourishing recipe for the whole family. Serve it with white rice or rice with vermicelli and salad for a complete meal.

Ingredients

  • 1 dry onion
  • 2 tablespoons oil
  • 1/2 teaspoon curry spice
  • 1 teaspoon meat spice
  • A pinch of black pepper
  • Bay leaf
  • Medium-sized meat pieces
  • 1 tablespoon sugar
  • 1 kilo green fava beans
  • 4 cloves garlic, crushed
  • 1 cup fresh coriander

Method

Follow the cooking sequence without leaving the page.

  1. Chop the dry onion and put it in a pot with oil over the heat...
  2. Add all the spices to the onion, then add veal or beef cut into medium-sized pieces.
  3. Stir the meat with the onion and when the meat changes color add the sugar, which will help the meat cook faster... Cover the pot and keep it over low heat until the juices released by the meat evaporate.
  4. Add the green fava beans cut into small pieces and stir them with the onion.
  5. Add boiling water and leave them to simmer over low heat until the meat and fava beans are cooked.
  6. In a separate pan, fry the crushed garlic and chopped fresh coriander in a little oil or ghee as desired. After the fava beans and meat have cooked, add this fried garlic and coriander over the meat and beans with a sprinkle of fresh (unfried) coriander, then turn off the heat to preserve the beautiful green color of the coriander added in the final minute.
