Ingredients

  • chicken, cut into pieces and well washed
  • onion, cut into quarters
  • 1 teaspoon dried coriander with the chicken broth
  • 4 bay leaves
  • several garlic cloves for boiling the chicken
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons salt, or to taste
  • 1 liter or 4 cups hot water
  • 1/2 kilogram finely chopped green molokhia
  • 1 tomato
  • 4 garlic cloves, crushed for the sauté
  • 1 teaspoon dried coriander for the sauté
  • 2 tablespoons oil

Method

  1. In a pot, add the chicken and stir until it changes color and the liquid dries out, then add the onion cut into quarters and the garlic cloves and stir.
  2. After a short while, add the coriander, black pepper, bay leaves, and salt, then add the hot water.
  3. Cover the pot and let the chicken boil over medium heat until cooked, about 45 minutes... and skim off any foam from the surface if it appears.

  4. Remove the chicken pieces after boiling from the pot and place them in an oven tray, then brown them from the top and bottom for 10 minutes or until golden.

  5. Discard the onion pieces and bay leaves from the broth, then add the smooth molokhia (washed, well dried, and finely chopped), and add cold water as needed so the broth is not too thick but remains sufficient and not too little.
  6. Remove the stem from the tomato and add it to boil with the molokhia to help reduce the sliminess of the green molokhia.
  7. Let the pot boil for 10 minutes, then skim off the foam from the surface and remove the tomato, discarding it.

  8. Leave the molokhia over low heat and prepare the sauté on the side.
  9. In a pan, add the oil, crushed garlic, and dried coriander and stir until softened.
  10. Add the sauté to the molokhia and let it boil for another 10 minutes, then serve immediately hot with fluffy rice.
