Cauliflower maqluba... an excellent vegetarian recipe

Ingredients

  • Cauliflower
  • Rice (any type you prefer) — 2 cups
  • 1 large onion
  • Salt
  • Cinnamon
  • Baharat (seven-spice blend)
  • Oil for frying the cauliflower

Method

  1. Cut the cauliflower into medium florets and fry them in oil; set aside to drain.
  2. Rinse the rice and set it aside to drain as well.
  3. Slice the onion into large wedges and place it in a pot with a tablespoon of oil; sauté until slightly softened.
  4. Add the rice on top of the onion, sprinkle with salt and a pinch of cinnamon and baharat, and stir.
  5. Add water at a ratio of 2 cups water for each cup of rice and stir lightly. Add half of the fried cauliflower as well.
  6. When the water comes to a boil, reduce the heat, cover the pot, and let the maqluba cook.
  7. To serve, arrange the remaining cauliflower on top.
