Maamoul Mad with Dates

  • 2 cups flour
  • 3 cups semolina
  • 1 cup melted unsalted butter
  • 3/4 cup sugar
  • 1 teaspoon mahleb
  • 1 teaspoon finely ground anise
  • 1 teaspoon baking powder
  • A pinch of yeast
  • 1/2 cup orange blossom water
  • 1 cup yogurt
  • Date filling
  • Pitted dates are kneaded with a little butter, orange blossom water, rose water, finely ground anise, and a pinch of ground ginger.
  • Divide the dough into two halves. Roll out the first half in a buttered tray and spread the dates over it. With the second half of the dough, take small pieces, flatten them by hand, and place them in the tray until the dough is used up. Method

  1. Combine the dry ingredients, add the butter and rub them together, then let rest for a little while... then add the remaining ingredients and knead well, and let the dough rest for about 15 minutes
